Egg-Tastic Recipe #1 Hard-Boiled Eggs
One of the most simple egg recipes is hard-boiled eggs. I use boiled eggs as a quick snack when I am hungry. Hard-boiled eggs are portable and travel well. They taste great with a bit of sea salt and pepper. Eggs from the grocery store may already be several weeks old. You can boil them very easily on the stovetop. Since we use farm-fresh eggs there is a trick to cooking hard-boiled eggs that allows for easy peeling of the shells.
Hard-Boiled Farm Fresh Eggs
We use a metal vegetable steamer placed inside a larger pot. Place 2-3 inches of water in the bottom of a large pan that has a lid and is large enough to hold the metal vegetable steamer.
Bring water to a boil, and place a metal vegetable steamer inside the pit of boiling water. Place 6-8 eggs inside the metal vegetable steamer. The number of eggs will vary according to the size of your vegetable strainer and pot. Water should not cover eggs. Once eggs are placed in a metal vegetable steamer basket, place the lid on the pot. The metal vegetable steamer keeps eggs from coming into contact with the bottom of the pan. I usually reduce heat from high to medium-high. Set the timer for 15-20 minutes. The cooking times may vary. When cooking time is complete, remove eggs and immediately place eggs in an ice water bath. For the ice water bath, choose a container large enough to hold eggs and room to add ice cubes and water. Leave eggs in the ice water bath for 10 minutes or so. This process allows the eggs to peel easily. Peeled hard-boiled eggs have many uses.
We eat hard-boiled eggs for snacks with salt and pepper. Hard-boiled eggs are very portable. If I am out running errands I might bring a couple to snack on to avoid getting overly hungry and heading to a fast food drive-thru.
Egg-Tastic Recipe #2 Egg Salad
Egg salad is one of the egg-tastic recipes that are quick with just a few ingredients. If using hard-boiled eggs for egg salad I take a small bowl and chop 3-4 eggs into small pieces, add a tablespoon of mayonnaise, a teaspoon of mustard, and salt and pepper to taste. I usually place my egg salad on toasted bread so the egg mixture doesn't make my bread soggy. These are simple ingredients that are easy to prepare, and the end result is delicious. I can eat this for lunch at home or at work.
Egg-Tastic Recipe #3 Chef Salad
We make a version of a chef's salad in which we use sliced hard-boiled eggs. This salad is usually loaded with whatever vegetables we have in the refrigerator as well as cheddar cheese, croutons, and our sliced hard-boiled farm-fresh eggs. Egg-Tastic Recipe #4 Omelet
Another great use for eggs is to use them in an omelet. Omelets are a great option to get eggs on the breakfast table quickly. This is one of the egg-tastic recipes that is very user-friendly. We usually use 2-3 eggs for each omelet. If you have a large egg, you may only need 2 eggs. Egg whites can be substituted instead of whole eggs and the process will be the same. If fluffy eggs are what you want, you can add a tablespoon of milk, or heavy cream to your egg mixture.
You can choose a vegetable filling for your omelet. If you choose a vegetable filling, you can melt butter in a small pan over medium heat to lightly saute the vegetables before adding the egg mixture. In addition if you prefer you can use a splash of olive oil to saute the vegetables instead of butter.
Once the vegetables have softened and cooked lightly, you can pour the egg mixture over the vegetables already in the pan. Allow eggs to cook until they are no longer runny. Keep an eye on the bottom of your omelet so you do not accidentally overcook the bottom. Gently run a spatula under the edges all around the perimeter of the omelet to ensure it is not sticking. You can now add any additional toppings such as cheese to the omelet. Cook on medium-low heat until the eggs are set and the cheese is melted. Fold the omelet over and serve. This is one method to incorporate vegetables into your omelet.
Additional Omelet Method
The other method I frequently use when I want a vegetable-filled omelet is to lightly saute vegetables such as onions, bell peppers, and mushrooms in a small saute pan, and set aside. Then pour the egg mixture into a lightly oiled pan, allow eggs to cook until set, then add vegetables and any other ingredients such as cheese, deli meat such as ham, and seasoning. Allow cheese to melt or slide an oven-safe pan under the broiler for a few seconds to melt cheese. Remember to stay near the oven using the broiler function. Food can burn very quickly! Omelets can be a hearty breakfast alone, but you can add breakfast meat such as sausage or bacon on the side.
